How the menu is planned and agreed
It starts with a conversation rather than a set list: the occasion, guest numbers, the style of evening you have in mind and anything the table loves or avoids. From there James writes a selection specifically for your evening.
Nothing is fixed until you are happy with it. Menus are usually settled a few weeks ahead so ingredients can be ordered properly, while guest numbers and dietary details can be adjusted much closer to the date.
Dietary requirements and allergies
Tapas suits mixed tables well, because vegetarian, vegan, dairy-free and gluten-free plates can be designed in rather than substituted on the night. Share requirements early and they shape the selection from the start. Amy lives with a nut allergy herself, so careful planning and clear communication matter to us.
Although every reasonable precaution is taken, food is prepared in environments where allergens may be present, so a completely allergen-free environment cannot be guaranteed.
Portions, pacing and presentation
When hosting at home, portions and timing are what make or break the evening.
- Portion sizes: aim for five to seven different dishes per person for a full meal.
- Pacing: serve breads, oils, cheeses and charcuterie first, then hot vegetable, seafood and meat plates in waves.
- Presentation: terracotta cazuelas, rustic boards and simple sharing platters suit the style far better than formal plating.
Venue, kitchen and what is included
We cook in private homes, hired venues and dry-hire spaces. All we need is oven and hob space, a sink and a work surface; where a venue offers less, tell us early and the menu and equipment are planned around it.
The service covers sourcing the ingredients, cooking everything on site to restaurant standard, serving each wave at the right moment and clearing down afterwards — the kitchen is left exactly as we found it. A limited amount of crockery and cutlery can be provided depending on the size of the event, and for larger bookings we work with a trusted hire company.
Guest numbers and pricing
Our minimum booking is 6 guests and we comfortably cater for up to around 100, depending on the format, venue and kitchen facilities.
Every evening is bespoke, so pricing is by quotation only. Cost is shaped by the menu, guest numbers, service style, location and staffing, and everything is confirmed clearly before you commit.
Where we cook
We cater regularly across Hertfordshire and Essex, into Kent and over to The Cotswolds, and travel further afield for larger events. If you would prefer a seated, multi-course format instead, our Private Dining experiences follow the same approach with plated service.
